Lemony Quinoa
Ah, quinoa. Super food, side dish du jour, grain of the month... whatever you call it, this grain is here to stay! You can't turn a market aisle corner without seeing quinoa and luckily for us, there are a million ways to prepare it. Great as a main or as a flavorful side dish, here's a refreshing, easy, and healthy recipe I love making for my friends and family.
What you'll need:
1 cup of quinoa
1 cup of water
1 cup of chicken stock (turkey or vegetable stock works great, too.)
1/2 red onion, chopped
2 stalks of celery, diced
1/2 tsp. cumin
1/4 tsp. cayenne pepper
1/2 bunch parsley
1/4 cup lemon juice
Combine quinoa, water and stock in a medium saucepan and bring to a boil. Then, reduce heat to a low simmer for cook covered for 10-15 minutes until quinoa is tender. Combine cooked quinoa, onion, celery, parsley, cumin, cayenne pepper and lemon juice in a large bowl. Season with salt and pepper for additional flavor if needed. Delicious served warm, room temperature or chilled!
