Salmon Avocado Cups

It's that time of year...summer's right around the corner and there's a buzz all around about getting "swimsuit-ready." By now, we all know healthy food doesn't have to be boring food! Here's a quick and easy way to get dose of protein, veggies and healthy fats (and might I add, a super cute way to serve it too!) It's an ideal meal-for-one and especially perfect when you're just too tired to cook.

What you'll need:

1 avocado

1/4 lb. poached salmon (available at your local grocer or oven-bake yourself)

1/4 diced red onion

1/2 rib of diced celery

2-3 tbsp plain Greek yogurt

S&P

Makes about 2 avocado cups

Combine salmon, red onion, celery, yogurt, salt and pepper into a small bowl. Then slice avocado in half, lengthwise. Remove pit (I find that using a spoon to "carve" the pit out is easiest and safest). Spoon salmon mixture into the avocado "crater." You can garnish with chopped scallions or parsley. Voila! I find eating this with a spoon is most enjoyable.
