Breakfast: Open-Faced Egg Sandwich
As a little homage to St. Patrick's Day, I thought I'd incorporate some green into my first meal of the day. Behold! My open-faced egg sandwich -- sharp cheddar cheese and an gooey fried egg on toasted artisan sourdough and topped with baby arugula, a drizzle of olive oil and fresh ground pepper. You can add a few slices of creamy avocado or juicy heirloom tomatoes for some freshness. Quick and easy if you're making breakfast for company, but also perfect for one! I paired this with some fresh berries and a glass of pre-made iced coffee and was immediately transported to an al fresco brunch in NYC sans the booze and bill.
